Key Lime Tartlets

St. Patrick’s day is right around the corner and I am sure you need a little green inspired treat to take to your St. Patty’s party to enjoy with your shamrock shake!😉☘️ These key lime tartlets are the perfect little individualized dessert and they pack a punch of flavor. They are smooth, creamy, tart and satisfying. Just follow the leprechaun to the end of the rainbow and hopefully, you will hit the jackpot of unlimited key lime tartlets🌈💚

Key Lime Tartlets
Barefoot Brit:
Serves: 12
  • Base
  • ½ cashews
  • ½ shredded coconut
  • 12dates
  • 2 tsp vanilla
  • ½ tsp pink salt
  • 4 tbsp oats
  • 1 tbsp coconut oil
  • Filling
  • ½ C cashews (soaked)
  • ½ C coconut cream
  • 2 tbsp coconut oil
  • ¼ C lime juice
  • 2 tbsp lime zest
  • 2 tbsp maple syrup
  • 1 tbsp corn starch
  1. Place ½ C cashews in boiling water and allow them to soak while you make the base
  2. Place all the base ingredients in a food processor and pulse in high until all ingredients are combined
  3. Place 1.5 tbsp of the base into a silicone cupcake liner and flatten out to make a cup shape
  4. Place base in the freezer for 15 mins to set
  5. Place all the filling ingredients in a high-speed blender and blend until smooth
  6. Pour the filling over the base and allow to set in the fridge
  7. Garnish with powdered sugar and lime zest
  8. ENJOY!

I remember trying to make key lime pie when I was maybe 13 years old, it didn’t go well because the recipe included Creme fraiche (which I had never tried before & quickly discovered my disliking to it). I think after 10 years of never having key lime anything, I’m going to give these tartlets a go 💚
