PB + J Cups

Who loves a good PB + J sandwich!?! I think everyone is the right answer to that question! So what else could be better than PB + J plus chocolate… NOTHING! These PJ + J cups are like a Reeces pieces cup on steroids and also much healthier! It is made with a chia jam that has just 4 simple ingredients to limit the amount of added and processed sugars and the peanut butter is all natural so what could be better. So make some of these cups for your valentine or galentine and they will love you forever ❤️

PB + J Cups
 
Barefoot Brit:
Recipe type: Snack
Serves: 6 large cups
Ingredients
  • ½ C dark chocolate
  • 1 tbsp coconut oil
  • ¼ C peanut butter
  • 1 tbsp powdered sugar
  • 6 medium strawberries
  • 1 tbsp filtered water
  • 1 tbsp maple syrup
  • 1 tbsp chia seeds
Instructions
  1. Place the dark chocolate and coconut oil in a double boiler and melt until smooth
  2. Using a cupcake tin with silicone liners paint the chocolate into the bottom and halfway up the sides
  3. Place in the freezer for 10 mins
  4. Meanwhile, mix the peanut butter and powdered sugar together until thick
  5. In a small saucepan, add chopped strawberries and water and let simmer on medium heat for 5-10 min until they are soft and mushy
  6. Remove the saucepan from the heat and squish the strawberries with a potato masher
  7. Add maple syrup and chia seeds and stir -- let sit for 5 mins
  8. Take the chocolate shells out of the freezer and add a tbsp of the peanut butter mixture to each cup
  9. Return to freezer for 5 mins
  10. Take out of the freezer and add a layer of strawberry chia jam on top of the peanut butter layer and return back to the freezer for 5 mins
  11. Take out of the freezer and add the top layer of chocolate to each cup and return to freezer for 30min -1h to chill
  12. Carefully remove from silicone cups
  13. ENJOY
  14. Store in freezer
