Peanut Chews

Have you ever eaten something that reminds you of your childhood!?! This gooey peanut butter chew bar is one of my grandma’s old recipes that brings me way back to the simpler days! This recipe originally had lots of sugar and corn syrup (the things you don’t care about when you’re a kid 😉) but with a little modification and a lot of love it is full of healthier ingredients that can allow you to reminisce on your childhood but not get that sugar high 😛


The modifications:

  • Brown rice syrup — a good alternative to corn syrup
  • Coconut oil — a good alternative to butter that is full of medium chain triglycerides that are easy to digest, not stored as fat, an immediate source of energy for the brain
  • Flax seeds — plant source of omega 3, which has an anti-inflammatory effect + high in fiber  to help aid in digestion + high in lignins, which have an antioxidant property
  • Hemp hearts — high in fiber to help aid in digestion + high in GLA that helps to naturally balance hormones + perfect protein meaning that it contains all 20 amino acids

Serves: 16 servings
  • ½ C brown rice syrup
  • ¼ C coconut oil
  • ½ C peanut butter
  • 1 tsp vanilla
  • 1 C cornflakes
  • 1 C rice krispies
  • ½ C peanuts
  • ¼ C hemp hearts
  • ¼ C flax seeds (ground)
  1. In a large bowl combine cornflakes, rice krispies, peanuts, hemp hearts, flax seeds + salt
  2. In a pot on medium heat combine the brown rice syrup + coconut oil and bring to a boil for 1 mins
  3. Take the pot off the heat and add peanut butter + vanilla
  4. Pour the hot liquid over dry ingredients + stir
  5. Place into a 9x9 pan + cool
  6. ENJOY!
