Sunshine sunshine, it’s fine, about time that the snow and cold be gone and we have some sun and spring coming our way. Time to transiting out of hibernation mode and into spring mode!
Butternut squash is such a staple in the fall and winter but it is wonderful all year long. The rich orange color indicates that it is full of carotenoids, which are powerful antioxidants in the body. Not to mention it is also full of vitamin A and vitamin C, which is great for the immune system (this can always use a little love!).
I created this recipe because I love lasagna but don’t love tomato sauce and you can’t really make lasagna without sauce! Swapping the tomatoes for butternut squash is a perfect alternative for a creamy and delicious dinner.
Chop the squash into cubes and toss in oil, salt, pepper, cinnamon, ginger, and nutmeg
Bake at 450° for 45 mins or until squash is tender
At this point, you can mash the squash or keep it in cubes depending on your preference
Then time to layer the lasagna -- place squash on the bottom, top with spinach and then apply a layer of pasta. Then spread vegan ricotta and sprinkle mozzarella. Continue this layering process for 3-4 layers (make sure the top layer has lots of moisture on the noodles so they don't get dry
Place in the oven at 350° with tin foil onto for 30 min

Peach bellini, dark cherry merlot, and warm vanilla sugar were some of my favorite hand soap scents growing up. A pump of foaming soap each time I washed my hands would leave my hands smelling amazing for hours! Stress causes a physiological response in the body that occurs in seconds when a stressful stimulus occurs due to the release of norepinephrine from the adrenal glands causing the body to go into “fight or flight”. After that stress response occurs much more happens in the body like an increase in cortisol. Dull, red, dry, scarred, and acne covered skin… this is not what anyone wants! Our skin is the first thing that people see when they look at us and I think its everyone’s dream to have perfectly glowing, dewy, and acne free skin (I know that is my dream🙌🏻)! Happy CHOCOLATE DAY!!! Talk about the best day in the whole wide world. I personally believe that chocolate should be a food group as it is that delicious and somewhat nutritious😉 Back in the day I used to LOVE Nutella, I would put that shit on everything! April is an exciting month because we get to have an extra break from school to celebrate Easter! To me when I hear Easter, I think all thing chocolate, easter eggs, cute pastel colors, and fuzzy little bunnies! We all know that bunnies enjoy carrots so what better way to celebrate Easter than a carrot cake (raw and vegan to boot)🥕🐰.
